Cauliflower Oatmeal

This one-pot, 20-minute recipe is a new favorite of mine! It’s incredibly delicious, filling, and foolproof.

To say I was skeptical about adding riced cauliflower to oatmeal would be a huge understatement! Honestly, the only time I really felt like eating oatmeal is when I’m sick. But I know how healthy it is and how filling it can be, so I’ve been searching for a way to make it more appetizing for me. It turns out, adding riced cauliflower is the key! The added texture is incredibly satisfying, and the hint of extra flavor is just what I needed. This breakfast dish is full of nutritional value, and it’s so easy to customize it and add different toppings depending on what I’m feeling each day.

Ingredients:

  • 1 cup riced cauliflower
  • 3/4 cup old fashioned oats
  • 1 tbsp ground flaxseed
  • 1 tbsp vegan vanilla protein powder
  • 1 tsp cinnamon
  • 1 1/4 cup plant milkoptional toppings: fresh fruit, agave, peanut butter, etc.

Method:

  • Add all ingredients to a medium saucepan and stir to combine.
  • Bring to a low simmer. Cook for 5-7 minutes or until the oats are soft and it reaches your desired consistency.
  • Top with whatever you like! I always top it with fresh fruit and a drizzle of agave. Enjoy & share!
