Best Vegan Chocolate Chip Cookies

These tacos are sweet, spicy, savory, packed with protein, and so easy to make!

Who knew I had to switch to a vegan diet in order to find the perfect chocolate chip cookie recipe? These cookies take almost zero effort to make, and they turn out perfect every time. Plus, I always have the ingredients on hand (a recipe scores major points with me if this is the case).

Ingredients:

  • 1 1/4 cup flour of choice
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cornstarch
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup plant butter
  • 1 tablespoon almond milk
  • 1 teaspoon vanilla
  • 3/4 cup vegan mini chocolate chips

Method:

  • Preheat oven to 350 degrees F/180 degrees C. Line a baking sheet with parchment paper.
  • In a small bowl, combine the flour, salt, cornstarch, and baking soda.
  • In a stand mixer, combine the sugars, milk, butter, and vanilla.
  • Slowly add the dry ingredients to the stand mixer (about 1/2 at a time).
  • Fold in the chocolate chips.
  • Using a small cookie scoop, transfer the dough to the cookie sheet.
  • Bake for 10-12 minutes.
  • Enjoy & share! Serve with a cold glass of oat milk.
