BBQ Chickpea Wrap

These wraps are packed full of flavor, protein, and economical ingredients, and they’re so easy to make!

I discovered this recipe in college, and I’m pretty sure I made it at least once a week. The ingredients are very economical, easy to find at any store, and the wraps only take about 20 minutes to make. And after tasting them, you’d think the opposite was true! They’re packed full of satisfying flavors that complement each other perfectly, and the high protein content makes them filling, satisfying, and energizing. I crave these wraps all the time!

Ingredients:

  • 2 burrito tortillas
  • 1 tbsp olive oil
  • 1 can chickpeas, drained and rinsed
  • 1/3 cup of your favorite barbecue sauce (try my recipe!)
  • 1/3 cup hummus
  • 1 tbsp lemon juice
  • 1/2 tbsp water
  • 1/2 tsp garlic powder
  • toppings: lettuce, tomato, red onion

Method:

  • In a large saucepan, heat the olive oil and saute the chickpeas until golden brown, about 5 minutes on low-medium heat.
  • Add the barbecue sauce, combine and heat for another 2 minutes.
  • In a small bowl, whisk together the hummus, lemon juice, water, and garlic powder.
  • Slice or dice your tomato and onion. I like to saute the red onion, but this is optional.
  • Build your wraps! Add the chickpeas, lettuce, tomato, onion, and the hummus dressing. Enjoy & share!
