This recipe gives baby carrots a delicious, unique, and satisfying flavor!

When I was a kid, I would only voluntarily eat carrots if they were roasted or cooked in a soup. So it could be the nostalgia talking, but these carrots are AMAZING! The garlic & parsley flavors perfectly complement the carrots enough to make you forget that you’re eating something healthy. I’d prefer these as a side over tater tots, and that says a LOT. Plus, I’m always looking for an excuse to use my Ninja air fryer!
Ingredients:
- 1 16 oz bag of baby carrots
- 1/3 cup vegan butter
- 1 1/2 tsp garlic powder
- 1 tsp dried parsley

Method:
- To start softening the carrots, they’ll need to soak in hot water for a few minutes. Add them to a medium stockpot, cover with water, bring to a boil and let cook for about 3 minutes. Strain and set aside.
- Melt the vegan butter & combine with the garlic powder and dried parsley.
- Spread the carrots out on your air roaster tray and pour the butter on top. Toss to coat as much as you can.
- Air roast at 360 degrees F for 16-18 minutes or until the carrots are fork-tender to your liking.

Air Roasted Garlic Butter Carrots
Ingredients
- 16 oz baby carrots
- 1/3 cup vegan butter
- 1 1/2 tsp garlic powder
- 1 tsp dried parsley
Instructions
- Put the carrots in a medium saucepan & cover with water. Bring to a boil and cook for about 3 minutes. Remove from heat and strain.
- Melt the butter, then combine with the garlic powder and dried parsley.
- Spread the carrots out on the air roaster tray. Pour the butter on the carrots, toss well to coat.
- Air roast at 360 degrees F for 16-18 minutes or until the carrots are fork tender to your liking. Enjoy!
