I’m not one to crave vegetables.. but I never want to go more than a week without this recipe!

This is the kind of recipe that makes me look at my empty plate and say, “Why in the WORLD did I not double that?”
I have to give my sister, Leslie, credit – she introduced me to air frying brussels sprouts. When we both still lived at home, I would request this as a side for literally anything, probably more often than she preferred. Brussels sprout withdrawals came when she moved out, and I had to take over! This is Leslie’s recipe with a dash of do as you peas.
Ingredients:
- 1 lb brussels sprouts
- olive oil
- sea salt
- black pepper
Dip:
- 1/2 cup vegan mayo
- 1 tbsp sriracha
- 1 1/2 tbsp maple syrup
Method:
- Cut the brussels sprouts into bite-sized pieces. I usually either cut them in half or fourths, depending on how big they are.
- Add the pieces to a large bowl and drizzle with olive oil. Mix it up, add olive oil if needed to coat all of the brussel sprouts.


NOTE:
Don’t throw away the leaves that fall off while you’re cutting them up! The leaves get perfectly crispy in the air fryer.
- Grate some sea salt and black pepper over the bowl, stir again.
- Add to your air fryer basket, or in my case, tray (spreading out if using a tray).

- Air fry at 400 degrees F/200 degrees C for 10 minutes.
- Shake the basket or toss the brussels sprouts on the tray, and return to the air fryer for another 5 minutes.

- Combine all the dip ingredients in a bowl, taste, and adjust as needed.

Air Fryer Brussels Sprouts
Ingredients
