Air Fryer Baked Potatoes

Finally – I have found the ultimate baked potato recipe! These come out with perfectly crispy skin and a fluffy interior every time!

There is nothing quite as comforting as the perfect baked potato. There are countless opinions about how to do it right – poke/don’t poke, cover with oil/leave dry, wrap in foil/no foil. I’ve tried them all! And it turns out, the change I needed to make to get baked potatoes as soft and crispy as I wanted them to be was to use an air fryer, not an oven! These potatoes are washed, rubbed, poked, and air fried. The skin always comes out crispy and salty, and the interior is fluffy, soft, and ready for whatever toppings you want!

Ingredients:

  • 6 russet potatoes
  • 4 tbsp olive oil
  • 1 1/2 tbsp ground sea salt
  • 1 1/2 tbsp ground black pepper
  • 2 tsp dried parsley

Method:

  • Wash the potatoes and poke them 5-6 times with a fork.
  • Add the potatoes to a large bowl and drizzle the olive oil and spices over them. Toss and rub until they are all well coated.
  • Place the potatoes in your air fryer basket or tray. Air fry at 390 degrees F/198 degrees C for 40 minutes or until tender.
  • Serve with sour cream, cheese, butter, my slow-cooked lentils, air fried broccoli, etc. The list of toppings can go on forever! Enjoy & share.

This is my new favorite way to make baked potatoes! The air fryer gets them perfectly fluffy, and the skins come out crispy and flavorful every time!
