These tacos are sweet, spicy, savory, packed with protein, and so easy to make!
Who knew I had to switch to a vegan diet in order to find the perfect chocolate chip cookie recipe? These cookies take almost zero effort to make, and they turn out perfect every time. Plus, I always have the ingredients on hand (a recipe scores major points with me if this is the case).
Ingredients:
- 1 1/4 cup flour of choice
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cornstarch
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup plant butter
- 1 tablespoon almond milk
- 1 teaspoon vanilla
- 3/4 cup vegan mini chocolate chips
Method:
- Preheat oven to 350 degrees F/180 degrees C. Line a baking sheet with parchment paper.
- In a small bowl, combine the flour, salt, cornstarch, and baking soda.
- In a stand mixer, combine the sugars, milk, butter, and vanilla.
- Slowly add the dry ingredients to the stand mixer (about 1/2 at a time).
- Fold in the chocolate chips.
- Using a small cookie scoop, transfer the dough to the cookie sheet.
- Bake for 10-12 minutes.
- Enjoy & share! Serve with a cold glass of oat milk.
