Tofu Scramble

This is one of my favorite healthy breakfast options! It’s as delicious as the egg scrambles I used to love, and it’s so easy to make!

There is so much to love about tofu scrambles! They have the same texture as the scrambled eggs I used to love, the process is so simple, the flavors are customizable, and they’re full of nutrition! I use extra firm tofu for a high protein content, and it doesn’t even need to be pressed. The seasonings all add their own health benefits and I always have them on hand (which, of course, gives this recipe bonus points)! My favorite way to eat this is with some hot sauce in a breakfast burrito, but it’s also great with some avocado toast, breakfast potatoes, in a sandwich, or just by itself!

Ingredients:

  • 1 14-oz block super firm tofu
  • 1 tbsp olive oil
  • 1 1/2 tbsp nutritional yeast
  • 1/2 tsp salt
  • 1/2 tsp turmeric
  • 1/4 tsp garlic powder
  • pinch of kala namak (black salt)
  • 2 tbsp unsweetened plant milk

Method:

  • Heat the olive oil in a medium saucepan. Crumble the tofu directly into the pan, making the pieces as big or small as desired.
  • Cook over medium-low heat for 4-5 minutes or until the water has mostly evaporated and the tofu is done to your liking.
  • Combine all of the remaining ingredients in a small bowl.
  • Add to the tofu and stir to combine. Taste and adjust seasonings as needed, then add any veggies you want.

Serve with hot sauce, avocados, in breakfast tacos, or whatever you want! Enjoy & share!
