Spicy Cucumber Salad

This is a fun, colorful way to spice up your snack time! Cucumbers are full of nutrition, and this salad is full of flavor!

I am always looking for ways to add nutrition to my life without making any big changes. I love having salad for lunch, but I’m a sucker for store-bought, high-calorie, creamy vegan dressings! I’ll also add some crispy jalapeno pieces to add some crunch and spice (and calories, unfortunately). This cucumber salad is a game changer! It’s crunchy, spicy, refreshing, and full of nutrition! Cucumbers are high in many essential vitamins, and they’re great for hydration, digestion, and more. Write these ingredients on your grocery list!

Ingredients:

  • 1 english cucumber
  • 1 clove garlic, minced
  • 1/2 tbsp sesame oil
  • 1 tsp soy sauce
  • 1 tsp white balsamic vinegar
  • 1 tsp sriracha
  • sesame seeds, for topping

Method:

  • – Cut the cucumber into 2-inch blocks. On each of them, make deep, diagonal cuts without cutting through. Repeat on the opposite side.

(Don’t they look so… fancy?)

  • Combine all remaining ingredients in a small bowl, then taste and adjust the flavors as desired.
  • Pour over the cucumbers and top with sesame seeds. Enjoy & share!
