Vegan Swedish Meatballs

I FINALLY perfected my vegan Swedish meatball sauce recipe! I have been chasing after the nostalgia I feel when I eat this version for years! It tastes just like the Swedish meatballs my mom made all the time when I was growing up. It takes 15 minutes to make, and I always have the ingredients on hand, which makes this a wonderful weeknight option. It’s just about as comforting as a crowd-pleaser can get!

Ingredients:

  • 1 cup vegetable broth
  • 1 cup cream of mushroom
  • 1/3 cup vegan sour cream
  • 1 tbsp low sodium soy sauce
  • 1 tbsp parsley
  • optional: 1 tbsp cornstarch + 1 tbsp water

Method:

  • Add all of the ingredients to a saucepan and whisk to combine.
  • Simmer for 5-7 minutes or until it reaches your desired consistency. Depending on which brand of vegan sour cream you use, you may or may not need to add the cornstarch mixture to thicken it up.
  • Combine with your favorite cooked vegan meatballs & pasta. Enjoy & share!
