These nuggets are addictive! They’re packed with protein, absolutely delicious, and so simple to make!
Vegan chicken nuggets are so easy to find these days, and they are all delicious! I could easily live off of them, but they can be a bit pricey and a little too processed to be eating all the time. This recipe is my solution – nuggets made from high protein tofu and club house crackers, all the flavor and texture I expect from vegan chicken nuggets, and the process of baking (not frying!) them is as simple as can be. Serve with my favorite “honey” mustard recipe and enjoy!
Ingredients:
- 1 16-oz block super firm tofu
- 2 cups club house cracker crumbs
- 1/2 cup all purpose flour
- 1/2 cup plain, unsweetened plant milk
- 1/3 cup water
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp sea salt
- cooking oil spray
Method:
- Preheat your oven to 450 degrees F/230 degrees C. Line a large baking sheet with parchment paper.
- Cut the tofu into 12 nugget-sized pieces. Thoroughly process the crackers in a food processor.
- Whisk together the milk, water, flour, and spices. Spread the cracker crumbs out on a plate.
- Dip the tofu nuggets one at a time into the wet mixture, shake off any excess, then toss in the cracker crumbs to coat. Place on the baking sheet, leaving space between each nugget. Once they are all laid out, spray them with cooking spray, flip, and spray the other side.
- Bake for 30 minutes, flipping the nuggets halfway through. Serve immediately with your favorite dips/condiments (try this “honey” mustard). Enjoy!
