Vegan Cajun Pasta

This 20-minute recipe is an easy crowd pleaser! It’s so creamy (look at that picture!) and full of flavor. Try it and enjoy!

I have always been a huge fan of Cajun seasoning! It’s the perfect combination of flavorful and spicy, and it compliments so many dishes. This is my favorite combination of the classic mix of paprika, cayenne, oregano, garlic powder, and black pepper. Add all of that to a creamy, cheesy pasta dish, and you have one of my favorite weeknight meals. This recipe only takes about 20 minutes to make, the process is as simple as can be, and you can easily adjust the seasonings to your preference. I LOVE spice, so I use the full amount of cayenne pepper when I’m just making this for myself, but I’m much more stingy with it when I’m sharing with people who like the spice to be subtle.

Ingredients:

  • 3 cups small pasta
  • 2 1/2 cups plant milk
  • 4 garlic cloves, minced
  • 1/2 cup nutritional yeast
  • 1/4 cup flour
  • 2 tsp lemon juice
  • 1 tsp paprika
  • 1 tsp oregano
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • optional: vegan grilled chicken

Method:

  • Cook the pasta and the vegan grilled chicken (if desired) according to the package instructions.
  • Combine all of the remaining ingredients in a small saucepan and bring to a boil. Lower heat and constantly stir for about 5 minutes or until completely combined and at your desired consistency. Taste and adjust seasonings as needed.
  • Combine the cooked pasta, vegan grilled chicken pieces, and sauce in the pasta stockpot. Enjoy!
