Vegan Korean BBQ Tacos

To put it simply, this sauce is SO GOOD! The slaw perfectly rounds the tacos out, and altogether this recipe only takes about 20 minutes!

Korean BBQ used to always be something I was thrilled to see on restaurant menus. I just knew the sauce would be amazing, unique, and satisfying! Now, since it’s more difficult to find as a vegan option, I needed to make my own to add to tofu, seitan, or vegan ground meat. This time, I used packaged vegan ground meat and made my own slaw, and the whole process only took about 20 minutes! The sauce completely satisfies my cravings and the slaw adds a great crunch and flavor to the tacos.

Filling Ingredients:

  • 1 lb vegan ground meat (I used beyond)
  • 1 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/4 cup coconut aminos
  • 1/4 cup sugar of choice
  • 2 tsp sesame oil
  • 1 tsp red pepper flakes
  • 1/4 tsp ginger
  • tortillas

Topping Ingredients:

  • 1/2 cucumber
  • 3/4 cup carrots
  • 4 small radishes
  • green onions
  • 3 tbsp lemon juice
  • 2 tsp sugar
  • pinch of salt

Method:

  • Slice all of the veggies for the topping into matchstick pieces.
  • Combine in a bowl, top with lemon juice, sugar, and salt, and stir.
  • Let sit for at least 15 minutes.
  • Brown the vegan meat in a saucepan.
  • Combine all of the sauce ingredients in a bowl, then add to the saucepan.
  • Stir to combine and cook for an additional 5 minutes. Taste and adjust flavors as needed.
  • Add to tortillas and top with the homemade slaw. Enjoy & share!

  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 1/4 cup coconut aminos
  • 1/4 cup sugar
  • 2 tsp toasted sesame oil
  • 1 tsp red pepper flakes
  • 1/4 tsp ginger
  • tortillas

Topping

  • 1/2 cucumber
  • 3/4 cup carrots
  • 4 small radishes
  • green onions
  • 3 tbsp lemon juice
  • 2 tsp sugar
  • pinch of salt

Instructions
 

Filling
