Vegan Fettuccine Alfredo

This sauce is SO creamy and cheesy! It only takes about 20 minutes to make and is a total crowd pleaser.

I have not struggled with finding a good vegan alfredo recipe – it’s not difficult to get a creamy, cheesy sauce made from plants. The one thing I had struggled with was finding a recipe that did not require a high-powered blender, soaking time, or a special trip to the store. This recipe has no nuts, no tofu, and I always have the ingredients on hand! Nutritional yeast is the star of the show, giving this sauce a nice boost in complete protein, B vitamins, antioxidants, and delicious flavor!

Ingredients:

  • 10 oz fettuccine pasta
  • 2 cups unsweetened plant milk
  • 4 tbsp cornstarch
  • 2 tbsp olive oil
  • 2 tsp garlic powder
  • 6 tbsp nutritional yeast
  • 1 tsp ground sea salt
  • 1/2 tsp ground black pepper

Method:

  • Cook the noodles according to the al dente instructions on the box.
  • In a large stockpot, whisk together the milk and cornstarch. Add the oil, garlic powder, salt, and pepper, and whisk again to combine.
  • Slowly bring to a boil over medium-low heat, whisking occasionally. Once it starts to thicken, whisk constantly.
  • Once thick, remove from heat, add the nutritional yeast, and whisk until combined and smooth. Taste for salt and pepper.
  • Combine with the cooked pasta.
  • Enjoy & share!
