Slow Cooker Lentil Burritos

This recipe takes no effort to make, and it’s absolutely delicious! It’s the perfect burrito or taco filling, and it’s even great as a chip dip.

My slow cooker has always been my best friend, but this recipe gives me an entirely new appreciation for it! The lentils come out nicely tender, and they take on the flavors of everything else perfectly. Plus, it’s easily customizable and can be adjusted to whatever you’re in the mood for! I like to use corn salsa to give this filling a little bit of sweetness, and I always make sure to have ripe avocados to make my burrito or tacos extra loaded. Make sure to try this as just a chip dip, too – it’s delicious and great as a shareable appetizer!

Ingredients:

  • 1 1/2 cup green or brown dry lentils
  • 3 cups vegetable broth
  • 1/2 yellow onion
  • 3 garlic cloves
  • 1 1/4 cup salsa
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 tsp dried oregano
  • 1 tbsp dried parsley
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 1 tsp salt
  • tortillas
  • taco/burrito toppings

Method:

  • Other than measuring, the only prep you need to do is pick through and rinse the lentils, and mince the garlic and onion.
  • Then, add all the ingredients to your slow cooker (this one is the best!) and stir to combine.
  • Cook on high for 4-5 hours or on low for 7-8 hours. It’s done when the lentils are tender and almost all the liquid is cooked off.
  • Use a slotted spoon to take the filling from the slow cooker. Add to burritos or tacos with more salsa, guacamole, this vegan cheese sauce, lettuce, etc, or eat alone with tortilla chips.
  • Enjoy & share! Store in the fridge for up to a week.
