Quick Pomodoro Style Pasta

If you’re looking for a simple way to make a classic 5-star Italian dish, you’ve come to the right place!

Angel hair pomodoro has always been my favorite option at Italian restaurants! So much so that I’m almost embarrassed to say I never thought of making my own version until recently. Better late than never! This recipe is so easy to make – I only used ingredients that I always have on hand or can easily find at any grocery store, and it takes less than 30 minutes. Plus, compliments come from every which way when I make this, so I can proudly say it’s a crowd-pleaser!!)

Ingredients:

  • 12 oz pasta
  • 1 cup cherry tomatoes
  • 3 roma tomatoes
  • 2 tbsp olive oil
  • 4 garlic cloves
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp dried basil
  • 1/4 tsp crushed red pepper

Angel hair is my favorite, but any pasta would be great with this sauce!


Method:

  • Cook your pasta according to the al dente instructions on the box.
  • Roughly chop the cherry tomatoes, and dice the roma tomatoes into whatever size pieces you want. Mince the garlic.
  • In a large pan, heat the olive oil. Add the garlic & sauté for about 2 minutes.
  • Add the tomatoes, salt, and pepper. Let simmer for about 10 minutes, stirring occasionally.
  • Add the cooked pasta, red pepper, and basil. Toss until combined. Enjoy!
