Give your grilled cheese a huge, simple upgrade with this recipe!
Grilled cheese is a simple, timeless option that never disappoints. Throw some vegan cheese in the middle of two slices of bread, heat it up and you have a tasty, satisfying lunch. But what if you used sourdough bread, some tempeh bacon, and sauteéd onions? Now you have a well-rounded 5-star meal! This sandwich is sweet, smoky, cheesy, and layered with satisfying textures. And it’s so easy to make!
Ingredients:
- 4 slices of sourdough bread
- 4 slices of Daiya cheddar cheese
- 1/4 small-medium yellow onion
- 10 pieces of tempeh bacon
- 3 tbsp vegan mayonnaise
NOTES:
- There is something about sourdough that makes me believe it was made specifically for grilled cheese, but if you disagree, use your bread of choice!
- I chose to use Follow Your Heart brand cheese because I believe it melts the best, but any sliced vegan cheese would be fabulous in this sandwich.
- I used to always use butter on the outside of grilled cheese sandwiches, but for some reason, mayonnaise gives it a much more desirable and satisfying crispiness, in my opinion. I used Follow Your Heart vegenaise this time, and it worked perfectly!
- Whenever I make my tempeh bacon, I always make sure to save enough to have this grilled cheese later in the week.
- The amount of each of the ingredients will vary based on how large or small your sourdough slices are.
Method:
- Slice & sauté the onion.
- Spread the mayo on one side of each sourdough slice & add two to a large saucepan, mayo side down.
- Build your sandwich! Add a slice of cheese, the bacon, the second slice of cheese, onions, and the second piece of bread mayo side up.
- Cook on each side for about 2-4 minutes or until they are done to your liking, and the cheese is melted. Enjoy & share!
Vegan Loaded Grilled Cheese
Ingredients
- 4 slices sourdough bread
- 4 slices vegan cheddar cheese
- 1/4 small yellow onion
- 10 pieces tempeh bacon
- 3 tbsp vegan mayonnaise
