BBQ Shredded Tofu

This might be my new favorite way to prepare tofu!

I’ve never really thought of tofu as a crowd-pleasing ingredient, but this recipe has changed that! Shredding and baking tofu gives it a meaty texture, and it absorbs the barbecue sauce and spices like a champ. Plus, I thought it would be tough to make it right, but it’s very simple! I used to be a big fan of BBQ pork sandwiches with coleslaw, so this is my vegan version of that.

Ingredients:

  • 16 oz block of extra or super firm tofu
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 2 1/2 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 cup bbq sauce
  • 1/4 cup water

NOTE: Super firm tofu is my favorite because it’s the easiest to work with in recipes like this, but it’s not as common as extra firm. The tofu does not have to be pressed because it will dry out in the oven, but you will want to pat extra firm tofu down so it’s easy to shred and doesn’t just fall apart.

Method:

  • Preheat your oven to 350 degrees F/180 degrees C. Line a large baking sheet with parchment paper.
  • Use the large side of a grater to shred the tofu. Set aside.
  • In a large bowl, combine the soy sauce, olive oil, chili powder, garlic powder, and paprika. Add the tofu, and gently mix until well coated.
  • Spread the tofu in a thin layer on the pan. Bake for 15 minutes, stir the tofu and bake for an additional 15 minutes.
  • Mix the BBQ sauce and water together & pour over the tofu. Mix on the pan to combine as much as you can, then return to the oven for another two minutes. This will heat the sauce and give the tofu a meaty texture.

Serve in a sandwich with my simple vegan coleslaw, on nachos, in wraps, on baked potatoes, in tacos, etc. Enjoy & share!
