Everybody needs a trusty taco Tuesday recipe!
This is by far my favorite taco recipe. I absolutely love lentils! They’re delicious, versatile & so easy to make. Plus, this recipe includes a make-your-own spice mix, so you can customize it based on what you’re craving.
Lentil Ingredients:
- 1 cup dry lentils
- 2 cups water
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1/2 yellow onion, minced
- 1/4 cup vegetable broth
- corn or flour tortillas
Spice Mix:
- 1 tbsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp crushed red pepper
- 1/4 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp sea salt
- 1/2 tsp black pepper
Method:
- To make the lentils, add them to a small stockpot (after rinsing thoroughly) with 2 cups of water. Bring this to a boil, lower the heat, and let simmer for about 20 minutes or until tender.
- Meanwhile, sauté the onion in a large frying pan for about 5 minutes, and make your spice mix. Add the garlic & spice mix to the pan, and continue to sauté for another minute.
- Warm the tortillas in the oven or on the stovetop.
- Once the lentils are tender & drained, add them to the frying pan with the vegetable stock. Mix & mash with a potato masher or fork to get it to a beef-like texture. Stir and cook until heated through. If the mixture starts to dry out, add some more vegetable stock.
- Assemble your tacos! Top with lettuce, jalapeños, guacamole, taco sauce, vegan queso, etc. Enjoy & share!
Lentil Tacos
The only thing that could possibly make these tacos better is to pair them with a margarita!

- corn or flour tortillas
Spice Mix
- 1 tbsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp crushed red pepper
- 1/4 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Bring the lentils & water to a boil, lower heat and simmer for about 20 minutes or until tender.
- Meanwhile, sauté the onion in a large frying pan for about 5 minutes. Add the garlic & spice mix for another 1 minute, stirring frequently.
- Warm the tortillas on the stovetop or in the oven.
- Add the cooked lentils and vegetable stock to the frying pan & stir. Mash the lentils with a fork or potato masher to give them a ground beef-like texture. Stir and cook until heated through.
- Add more broth if the lentils start to dry out.
- Assemble your tacos! Top with guacamole, jalapeños, lettuce, taco sauce, vegan queso, etc. Enjoy & share!
